Dinner for Brunch

I had this idea last night at dinner and just HAD to try it!  Had a busy morning at the gym – it was quiet when I got there but by the time I finished training my last client, almost every piece of cardio equipment was occupied and the gym was hoppin’ like a Monday night!  Ahhhhh I LOVE IT!  Apparently all this New Year’s fitness excitement worked up quite an appetite, because when I came home at 1ish I was absolutely starving!

Time to break out and transform some leftovers!  Enter: a bowl of roasted sweet potatoes, butternut squash, brussels sprouts and apples with two eggs on top.  It was just as good as I hoped it would be:)
