“Fried” Green Tomatoes with Lemon-Dijon Sauce

Today while out running errands, Secret Agent Man and I happened upon the Crystal City Farmer’s Market.  We walked through just to check it out and ended up buying all sorts of goodies from local farms: bison burgers, bison jerky, a handful of red beets, 3 pork sirloin chops and (wait for it)….green tomatoes.

Shocking confession: I grew up in the South and LOVE fried green tomatoes, but have never made them before.

I wasn’t about to take the obvious route of dredging them in flour and frying them in oil.  That would be too easy!  Some quick internet research led me to this recipe for Oven-fried Green Tomatoes made with almond flour.  Bingo.

I made some minor adjustments to the flour mixture – used garlic salt instead of garlic powder because I didn’t have any; added a little extra cayenne to make them spicier.

Lemon-Dijon Sauce

1/3 c. Lemonaise Light (found it at Whole Foods, no sketchy ingredients, just mayo lightened up with creole mustard, spices, vinegar, etc.)

2 Tbs. Grey Poupon Dijon mustard

1/2 Lemon, juiced

Combine ingredients in a small bowl and whisk until blended.  Taste and adjust to the consistency you like.  If it’s to mayonnaise-y for you, add more mustard.  If it’s too thick, add more lemon juice.  There’s really no recipe here, just whatever tastes good to you!
